Recipe
For the Pudding:
– 2 cups of cooked winter squash (either kabocha, butternut, or red kuri), no skins or seeds
– 1/2 cup of pure red cocoa powder *use carob powder if SCD
*optinal to tadd 1 Tbsp of raw honey for sweetness
Method:
1. While the squash is still warm from baking, place it in a blender and puree until smooth (it should have a applesauce or yogurt consistency – if it’s too thick / chunky, add a tiny bit of water to facilitate blending)
2. Add cocoa powder (make sure it’s red cocoa as this makes 100% of the difference in taste and won’t make your pudding taste bitter) and stir in with a spoon.
3. Transfer mixture into whatever serving bowl you want and refrigerate 2+ hours until chilled.
4. Top with your organic toasted coconut butter chips (recipe below) and enjoy!
1-Ingredient Coconut Butter Chips

– 1/2 Georgia Grinders x Lilsipper Organic Toasted Coconut Butter Chips
– 1 Tbsp of coconut oil (if you are using a fresh jar of the coconut butter you can use the coconut oil that rises to the top of each jar)
Method:
Melt the coconut butter and coconut oil in a double broiler or in the microwave at 30 second increments (stirring in between each 30 seconds) until melted. Pour into chocolate chips molds and refrigerate for 1 hour or freeze for 10 minutes. *Store any leftovers / extras in the refrigerator.
