


Anyone remember those soft, fluffy, pillow-like cookies? They’re here! (but healthy) NO BAKING is required for these easy-to-make classic cookies!
Do you know the ingredients in the original Lofthouse Sugar Cookie?

Ingredients
Sugar (most likely bleached), Enriched Bleached Wheat Flour (flour, Niacin, Reduced Iron, Thiamine Mononitrate, Riboflavin, Folic Acid), Margarine (palm Oil, Water, Soybean Oil, Salt, Mono- & Diglycerides, Calcium Disodium EDTA [preservative], Artificial Flavor, Annatto [color], Vitamin A Palmitate), Eggs, Water, Corn Starch, Vegetable Oil (palm Kernel Oil And/or Palm Oil And/or Partially Hydrogenated Vegetable Oil [cottonseed And/or Soybean Oil]), Dextrin, Skim Milk, Natural & Artificial Flavors, Leavening (baking Soda, Sodium Aluminum Sulfate, Monocalcium Phosphate), Soy Lecithin (emulsifier), Confectioner’s Glaze (lac Resin), Food Starch-modified, Polysorbate 60, Carnauba Wax, Colors (blue 1, Blue 1 Lake, Blue 2, Blue 2 Lake, Red 3, Red 40, Red 40 Lake, Yellow 5, Yellow 5 Lake, Yellow 6, Yellow 6 Lake), Sodium Propionate.
Need I say more? – Don’t get me started on the sugar content in these cookie! Yikes!
If you’ve been following me for a while on Instagram and know my work, then you already know all these ingredients can tax your health and cause issues with your gut, brain, skin, energy, and of course your weight and metabolism. – So of course I had to create an alternative with not only cleaner ingredients but an option that is packed with protein and actually GOOD FOR YOU!
Macros (for the ENTIRE recipe)
Fat – 4g
Carbs – 8g
Sugars – 8g
Protein – 62g

Ingredients:
– 1/2 cup of Bethany’s Pantry Digestive Support Vanilla Protein (recipe won’t work without it – it replaces the flour and keeps it GF, low carb, grain-free, and keto)
– 1 cup Greek yogurt (I used Fage)
– 3 Tbsp of raw cashew butter
Method:
Mix above ingredients and form into desired shape. Add sprinkles (I found these non-toxic naturally dyed sprinkles online and I’m obsessed!) and place in the refrigerator for the dough to harden up. Enjoy once cookies reach your desired consistency (if you can wait! – they are just as good enjoyed right away!)
