2-Ingredient Carnivore Cake Roll

 

2-Ingredient Carnivore Cake Roll

You could easily eat this entire roll and still meet your health goals since I filled it with Lifeway Farmer Cheese which packs in 15g of protein per serving + all the protein from the eggs.

 

Recipe

Ingredients:
– 6 pastured eggs
– 1 container of Lifeway Farmer Cheese
*Optional to add sweetener of choice (see note below)

**Butter to grease your parchment paper

 

Method:

1. Preheat the oven to 350°F and line a baking sheet with parchment paper and rub some butter onto the parchment paper (very important) then set aside.
2. Separate the egg yolks from the whites in separate bowls.
3. Using a stand mixer (preferred) or handheld mixer, beat the whites until stiff peaks form and set aside.
4. Add 1/3 cup of Lifeway Farmer Cheese to the bowl with the yolks and beat until well combined then carefully add the mixture to the egg whites and fold in gently. Try and not overmix to keep the fluffiness but mix enough to ensure it’s well incorporated.
5. Transfer the batter into the prepared baking sheet and shape into a rectangle with about 1″ – 1/2″ thickness height.
6. Bake in the preheated oven for about 15 minutes, or until done.
7. While the cake is in the oven, place a towel on a kitchen counter and a large piece of parchment paper on the towel.
8. Remove the cake from the oven and immediately invert the cake onto the prepared parchment paper and carefully remove the parchment paper you used to bake the cake on.
9. Roll up the hot cake with the (fresh) parchment paper and then roll it with the towel. Place it in the refrigerator to cool (about 1 hour) then remove to fill.
10. Once cooled, unroll the cake and spread the remaining Lifeway Farmer Cheese evenly on the cake and gently roll up. For best results (and taste) refrigerate the entire chake to chill and allow the filling to soak up into the cake (but not necessary, however it does make a difference!). I Suggest trying a slice immediately and then again after it’s been chilled in the refrigerator to compare which you like best. *Trim edges for aesthetics.
For serving:Slice and serve as is or with berries or a drizzle of chocolate or nut butter if not fully carnivore.

*Store the leftovers in the fridge for up to 3 days.

 

SWEETENER NOTES:
This cake is not sweet (how I personally prefer it!) however, you can add a granulated sweetener of choice to either the egg mixture or mix sweetener into the filling (or both but it may be too sweet if added to both).

*I personally like it without any sugar and with each slice, drizzle some raw manuka honey on top so I can control how much sugar I want for each piece. You can also sprinkle some raw cane sugar over each slice, this works great if you have guests and they can decide how much sugar they want to add.
