2 ingredient “cream cheese” frosting coming in hot! Dairy free, nut free, paleo, AND vegan! Say what?! The idea generated from my 2 ingredient chocolate frosting to pair with my grain free carrot cake, but I couldn’t wait to share this flippin’ bomb frosting any longer!
1 medium white sweet potato
1/2 cup coconut butter (not oil)
1. Skin sweet potato and chop into small pieces. Boil in water until soft.
2. In a high speed blender (like a Vitamix), place coconut butter at the bottom of the blender, then add the still hot sweet potato chunks (do not add liquid).
3. Blend until smooth and creamy. It will thicken once stored in refrigerator (keep that in mind when deciding if you’re going to frost something)
