This 2-Ingredient MARSHMALLOW FLUFF has 32g of protein!
Typical homemade marshmallow fluff calls for at least 1 cup of corn syrup! At best, honey can be used. Hey look, I love raw honey, but 1 cup is a bit much if you ask me! too much of a good thing is not a good thing. That’s why I wanted to create a lighter version keeping everything healthy.

WHAT’S IN TYPICAL MARSHMALLOW FLUFF / CREME?

CORN SYRUP, SUGAR, DRIED EGG WHITE, VANILLIN

Recipe
Ingredients:
– 1/2 cup of egg white powder (not egg white protein powder)
– 1/2 cup water
– 1/4 to 1/2 cup of maple syrup or raw honey (I used 1/4 cup of raw honey here)
*optional to add a dash of vanilla extract
Method:
1. Add 1/2 cup of egg white powder and 1/2 cup of water to a large mixing bowl or stand mixer bowl and whisk on hgh until stiff peaks form.
2. While your stand mixer (or hand held mixer) is still running, gradually pour in your maple syrup / honey (and vanilla extract if using) and it will begin to turn a light golden color. This must be done while the mixer is running to avoid clumps and deflation.
3. Transfer fluff into an airtight container and use it for topping your coffee, pancakes, waffles, making smores, or just eat with a spoon!
To make without egg white powder:
Use 4 egg whites
