2 Ingredient Raw Chocolate Truffles

2 INGREDIENT RAW TRUFFLES! Yup! You heard me. I love simplicity not just for health reasons, but meals and snacks with less ingredients is great for your wallet (if you know what I mean!)

These super low fat truffles are uber easy to make and contain NO nuts! (and yes, they’re delicious!) I’ve been eating one every day in the afternoon and it’s the perfect way to get a boost of energy and satisfy your sweet tooth without the crash.

Ingredients:
1 cup VERY soft (room temp) pitted dates
1/4 cup raw cacao powder (or more if you want them extra chocolate-y) plus extra for coating

1. In a small, bullet blender, process dates and cacao powder until it becomes a paste (it should have the consistency of play-dough)
2. Remove paste from blender (this part gets sticky!) and compress with hand to form one large ball, then pull apart sections and form little balls.
3. In a clean bowl, pour in extra cacao powder and drop each truffle in bowl and roll around to coat. Done!
NOTE: I store them in the freezer and they actually don’t “freeze” and keep the perfect consistency!
