
2-INGREDIENT paleo, vegan + keto sugar free SUGAR COOKIES!
I know, I know, no sugar “sugar cookies”? Hey Bethany, what’s the deal? Just trust me. These shortbread-like cookies are the perfect base for any decorations, toppings, and it’s even perfect as a pie crust! And just requires 2 ingredients!
Ingredients:
1/2 cup cashew butter, I used Artisana Organics Raw Cashew Butter – code: LILSIPPER
1/2 cup of my Vanilla Digestive Support Protein Powder
Unsweetened Santa Barbara Chocolate discs for coating (Optional) – code: LILSIPPER
Method:
Mix cashew butter and protein powder (no other protein powder will work) until a soft dough forms. Place between two sheets of parchment paper and roll out with a rolling pin. Cut into desired shapes and bake for about 8 minutes or until edges begin to brown. You MUST allow to cool completely before picking up (or they will crumble). You can place them in the freezer right after baking for best results. Coat with optional melted chocolate.
