2-Ingredient Tofu Bagels

2-INGREDIENT (dairy-free) BAGELS are here!

We all know the famous 2-ingredient yogurt dough recipe, but what if you can’t have dairy?

I got you!

Enter: Tofu! I know I know….but trust me on this. It has the same texture as yogurt when blended and works perfectly as an alternative while keeping the carb low, and protein content high (same as greek yogurt). It’s a blank canvas for any bagel flavor! – Go sweet. Go savory. Make it your own!  I topped mine with EBTB seasoning.

What about breast cancer?
The studies that were conducted where they found soy to cause breast cancer was misleading. Turns out, it was the glyphosate being sprayed on the soy that was the case, not the actual soy itself. And since soy is one of the most GMO produced and sprayed crops in America, it makes sense! – So be sure you are consuming organic certified soy products (if it’s organic then it’s automatically non-GMO)

Ingredient:
– 1 block of firm ORGANIC tofu
– 2 cups of self rising organic flour (or mix 2 cups of organic flour with 1 tsp of baking soda)
– 1 egg (for egg wash) *optional
EBTB seasoning *optional but recommended

 

Method:
Discard the water from the tofu and place the block of tofu in a blender. Puree until smooth and creamy (it should have a yogurt-like consistency). Pour the pureed tofu into a large bowl and add 1 cup of flour. Mix well. Then add the remaining cup of flour and continue mixing. Form into bagel shapes and place onto a baking sheet lined with parchment paper. Coat the top of each bagel with egg wash and sprinkle with EBTB seasoning. Bake in the oven at 350 F for about 30-4- minutes or until a toothpick comes out clean.
