20 Calorie Cookies

I’m not one to count my macros but I’ve received many requests over the years to include them in my recipes. And though I don’t for everything single one, I love a good challenge to make an endulgent cookie with exceptional macros! So here we are! These DO NOT taste like a low calorie cookie though!….and are made without any hard-to-find ingredietns!
– Dairy free
– Sugar free
– Gluten free
– Soy free
– Low carb
– NO protein powder




Recipe
Makes 20 cookies
1 cookie = 21 calories
Ingredients:
– 1 cup of organic pumpkin puree
– 3/4 cup red cocoa powder (code: LILSIPPER – *red tastes 10x better an you don’t need sweetener when using this cocoa)
– 2 Tbsp of nut butter (I used Georgia Grinders skin-free Organic Blanched Almond Butter for easy digestion)
– 1/2 tsp alluminum-free organic baking soda
*option to add a granulated sweetener of choice but that will alter the calorie content. See my note above regarding the cocoa powder.
Method:
Mix everything in a bowl (no need to mix dry / wet ingredients seperately!) until a thick batter forms. Using a cookie scoop, scoop out cookies on a baking sheet lined with parchment paper and bake in a preheated oven at 350 F for about 15 minutes. Allow to cool on the bking sheet for 1 hour (this will help them firm up and be easier to handle).
