20 Calorie Tofu Cookies


If you ate all 18 cookies it would only set you back 360 calories and give you a total of 36g of protein!
20 CALORIE COOKIES – but with a twist! Not only are these 20 calories each, but they are gluten and dairy free AND low carb + vegan friendly made without any protein powder!
Recipe
Ingredients:
– 10 oz of super firm organic tofu, drained
– 1 1/2 cups of filtered water
– 1/2 cup of *red cocoa powder (code: LILSIPPER)
– 1 1/2 tsp of aluminum free baking soda
– 1 egg white (optional, but recommended if not vegan but it will still work without)
Option to add mini chocolate chips
NOTES:
*Red cocoa powder is 10x richer in taste and color and provides a deep chocolate taste that makes it so you don’t need sweeteners. Hence, this is why I never use any sweeteners in my recipes because I use red cocoa powder. You can use regular cocoa powder, however you will need to add a sweetener since regular cocoa powder (which is 99% of cocoa powder on the market) is very bitter (red cocoa powder is NOT bitter).
Method:
Add drained tofu and water to a blender and puree until smooth and creamy. Transfer the tofu puree into a large bowl and add red cocoa powder, baking soda, and mini chocolate chips (if using). Mix well until you get a thick batter. If not using red cocoa powder (see note above) then also add in your prefered granulated sweetener of choice (do not add liquid sweeteners such as honey or maple syrup). At this time, taste the batter (since there is no egg white yet incorporated) and adjust sweetness to taste. Then add egg white (is using) and mix well. Scoop out with a cookie scoop onto a lined baking sheet and bake in a preheated oven at 350 F for about 20 minutes. Allow to cool completely (this is important) for the cookies to firm up.
