This was BAEgel. I love easy, on the go breakfasts, and this “quiche on the go” can actually be made ahead of time then warmed up in the morning (or eaten cold). What an Eggcellent idea!

Ingredients:
1 bagel of choice (NOT pre-sliced)
1-2 eggs
Cherry tomatoes
Avocado
.

.
1. Thinly slice the bottom of bagel and hollow out inside.
2. Scramble eggs and pour into bagel.
3. Add sliced tomatoes and chopped avocado.
4. Bake at 350 F for about 20 minutes.
5. While bagel is baking, eat hollowed out bread as a pre-snack.
