3 Ingredient Apple Turnovers!

When I asked in my Instagram stories what recipe my followers wanted with the loads of apples from our apple trees, Apple Turnovers was by far one of the top recipe requested. So obviously I had to get busy in the kitchen!
And ever since I made those 2 ingredient tortillas a few days ago, I’ve been hooked and made them 3x already! They were the perfect “crust” for these turnovers!

• Nut Free (excluding coconut)
• Seed Free
• Yeast Free
• Refined Sugar Free
• Paleo



For the filing:
2 apples, finely chopped (skins removed)
1/4 cup water
Dash of cinnamon

For the Crust:
My 2-ingredient tortilla recipe (recipe doubled)

Instructions:
1. Cook filling ingredients in a small pot until water has evaporated and apples are super soft. Gently smash them into a “chutney” texture (not applesauce but not large chunks) and set aside.

2. Add crust batter to a heated pan sprayed with oil. Once bubbles start to form (like cooking a pancake), add a little of the apple mixture in the center and gently fold over crust and press with a spatula to seal ends. Continue cooking a few minutes.

3. Once cooked, place in freezer (optional, you can also just eat them warm) a few hours and ice with melted coconut butter (I used both Evolved Chocolate unsweetened roasted coconut butter and Artisana Organics raw coconut butter). *Icing is optional.
