Yup, I went there. 3-INGREDIENT CRACKER TOFFEE! Sweet. Salty, Crunchy. (my favorite trio!) It’s a riff off of the typical “Saltine cracker toffee” recipe floating around, but healthy(er). It’s paleo, vegan, and requires just 3 simple ingredients!
3 INGREDIENT CRACKER TOFFEE
1 box of Hu Kitchen’s Grain Free Sea Salt Crackers
1/2 jar of caramel (THIS is the brand I used – it’s vegan, paleo, and refined sugar free!)

Pre-heat oven to 450 F. Spread entire box of crackers onto a lined baking sheet and gently crush crackers. Evenly pour 1/2 a jar of caramel sauce and place in oven for 2 minutes to allow sauce to sink into crackers. Remove from oven and layer with chocolate. Place back in oven for 1 minute for chocolate to melt. Spread chocolate evenly with a spatula and freeze until chocolate has hardened. Break into pieces and enjoy! *Store in freezer.
