Why I use Sunbutter instead of peanuts:
Sunbutter offers an Organic version which is literally just ONE ingredient (organic sunflower seeds!). No salt. No sugar. No added oils. And because I don’t eat peanuts, this is the closest to it! The taste and texture mimic peanut butter to the T and I don’t even miss peanut butter….
Peanut are highly inflammatory and can even cause skin issue, acne, gut issues, and are highly susceptible to mold. So even though I do not have a peanut allergy, I stay away from them and feel better for it!
Add all ingredients to a small blender and puree until smooth. Transfer mixture into a small dish lined with parchment paper and refrigerate 3 hour or overnight until firm. Slice into squares and enjoy! *Store in refrigerator for up to 3 days or freeze.
