3 Ingredient Zucchini Brownies (vegan, paleo, keto)



’tis the season for summer squash, so naturally I had to make dessert! This is actually a summer staple in my home so most likely you’ve already made it, but in case you haven’t take this as you sign!

– egg free
– nut free
– seed free
– sugar free
– grain free
– gluten free
– dairy free
– vegan
– paleo
– keto
– high in protein

Ingredients:
2 cups pureed zucchini *see notes
1/2 cup of Bethany’s Pantry DSP (I used the cocoa flavor but vanilla will also work)
3/4 cup of unsweetened red cocoa powder

Optional add-ins:
Sweetener *see notes
Chocolate chips of choice

Method:
Blend everything until smooth. Transfer into a lined baking dish, tops with chocolate chips if using, and bake at 350 F for 30 minutes. Allow to cool completely before slicing (very important!).

Notes:
*first chop zucchini and puree to measure out 2 cups, then add remaining ingredients*If using a sweetener, it won’t be keto or SIBO compliant, but if you decide to use one, I recommend 1/2 cup of coconut sugar.
