4 Ingredient Butternut Fudge (round 2)

If you’ve tried my infamous Butternut Squash Fudge I made back in 2017 with Vital Proteins, then get ready!…..This version is almost the same but instead of using coconut oil, I used a seed butter (so this version is 100% NUT FREE for anyone allergic to coconut or nuts in general – and no, butterNUT is not a nut LOL) I found the texture to even be more luscious than the original, yet it still contains all the original healthy qualities!

Ingredients:
1 cup butternut puree
1/4 cup organic Sunbutter (or any nut butter)
1/2 cup cacao powder (I used Santa Barbara’s Red Cacao Powder – $10 off: lilsipper)
2 1/2 scoops Vital Proteins gelatin (must be gelatin, collagen won’t work)

Instructions:
1. Blend all 4 ingredients until smooth (make sure butternut puree is hot/warm to activate the gelatin) then pour in desired shaped dish and refrigerate at least 3 hours or until firm. Store in refrigerator or freezer (I love eating them straight from the freezer – they kinda melt in your mouth!)
