CAULIFLOWER FUDGE – made with just 4 simple ingredients!
If you can put cauliflower in smoothies, then why not put cauliflower in fudge? You honestly can’t even taste it yet it’s the MAIN INGREDIENT!

• Low Sugar / Sugar free
• Dairy free
• High in fiber….and it actually tastes good!

Ingredients:
1 Head of cauliflower
1 cup Santa Barbara Chocolate chocolate chips (code: lilsipper), use unsweetened for keto/low carb / SIBO or sweetened
3 Tbsp of organic Sunbutter
2 Tbsp of Further Food’s grass fed Gelatin (code: lilsipper)
Method:
Steam cauliflower until tender. While cauliflower is still hot, carefully transfer it to a blender (I used a Vitamix) and puree. Once pureed down, add chocolate chips and Sunbutter and blend again. *The chocolate will naturally melt since the cauliflower is still hot. It should look like chocolate pudding at this point. Next, add Further Food’s gelatin and blend one more time. Pour mixture into a glass dish or silicone molds and refrigerate at least 3 hours or overnight until it firms. Slice, and enjoy!
