These 4 ingredient Paleo Hash Browns hit the spot! I’ve been craving more savory lately, in particular tater tots and hash browns. Why? I have no idea!!!! But I’m just going with it….but you know me better than to grab a bag of pre-made tots.

What’s wrong with packaged tots?

Below are the ingredients in Ore-Ida tater tots:

INGREDIENTS:
POTATOES, VEGETABLE OIL (SUNFLOWER, COTTONSEED, SOYBEAN, AND/OR CANOLA), SALT, YELLOW CORN FLOUR, ONIONS, DEXTROSE, DISODIUM DIHYDROGEN PYROPHOSPHATE, NATURAL FLAVORING.

But what about those popular Cauliflower Veggie Tots? They’re even worse!!!!!! Below are the ingredients in Green Giant’s version.

Ingredients:
Cauliflower, Modified Food Starch, Water, Soybean Oil, Contains Less Than 2% Of Citric Acid, Dextrin, Dextrose, Dried Egg, Granulated Garlic, Methylcellulose, Onion Powder, Rice Flour, Salt, Sodium Acid Pyrophosphate, Sodium Alginate, Baking Soda, Soy Flour, Spices, Sugar, Wheat Gluten, Wheat Starch, Whey, Xanthan Gum, Yellow Corn Flour

My version take only 4 ingredients and they are:
Paleo
Grain Free
Gluten Free
Sugar Free
Yeast Free
Soy Free
Preservative Free

They can also be prepared and cooked THEN frozen for the days ahead!

Makes 12 large or 24 small

Ingredients:
1, 12 oz. bag of frozen or fresh cauliflower rice
1/2 cup Otto’s Cassava Flour
1 scoop of Vital Proteins Collagen Peptides
2 whole eggs
*option to add spices and seasoning to taste
Coconut oil for cooking

Directions:
1. Mix cauliflower rice (if using frozen, mix while frozen. Do not steam or the moisture will affect the recipe) with Otto’s Cassava Flour and collagen well.

  1. Scramble eggs then incorporate them into the cauliflower mixture.

  2. With hands, form into desired shape and size.

4.. Heat a pan with coconut oil and cook each side a few minutes until golden brown. I assume you can also bake them but I have not yet tried that and the time will take much longer.
Serve with greek yogurt, ketchup, hummus, or guacamole (they’re also amazing on their own) and enjoy!

What would you dip these with and would you eat them for breakfast or dinner? Comment HERE and tell me!!!

Thank you Otto’s Cassava Flour for sponsoring this post and supporting me and what I do.
