I obviously used strawberries since they’re in season (and on sale everywhere!) but you can of course use any berry or fruit you want to your liking.

Ingredients:
3 1/2 cups fresh strawberries, halved (measure after halving)
3 1/2 scoops Vital Proteins Gelatin
1 pack (serving) Vital Proteins Strawberry Lemon Beauty Water (Optional)
Coating:
Santa Barbara 100% No Sugar 1-Ingredient Organic Chocolate Discs ($10 off: lilsipper)
Directions:
1. In a high speed blender (I used my Vitamix), blend strawberries until liquidated.
2. While blender is on lowest speed, add remaining ingredients, secure lid, then blend on high until well mixed. The color should lighten to a light pink.
3. Pour mixture into silicone molds or a pan lined with wax or parchment paper and refrigerate at least 1 hours or until firm to the touch.
4. Melt chocolate and remove strawberry filling from refrigerator (slice into squares if using one large pan). Cover squares with chocolate and place back in fridge for 10 minutes or until ready to consume.
*Store in refrigerator. You can also freeze them.
