These vegan cookies were one of my most saved and remade on Instagram, and I thought it was only appropriate to upload them to the blog for easy reference and of course, more photos. Oh, and what a coincidence that it’s National Chocolate Chip Cookie Day?! 😉
• Nut Free
• Egg Free
• Grain Free
• Gluten Free
• Vegan
Ingredients:
1, 15 oz. can of organic chickpeas (drained and rinsed)
1/2 cup of organic Sunbutter
1/4 cup date syrup (or honey if not vegan)
1/4 cup carbonated mineral water (helps it fluff!)
Santa Barbara Chocolate 1 ingredient, unsweetened chocolate chips (15% off: lilsipper15)
Instructions:
1. Puree all ingredients (except chocolate chips) until smooth. Bake @ 375 F for about 25 min. Remove from oven and place desired amount of chocolate on top of each cookie. Allow to cool on baking pan for 10 min.
