Bacon Lattice Elvis Sandwich

This ELVIS SANDWICH which is well known for the classic combo of
– peanut butter
– banana
– and bacon…..but if you know me by now, you know I don’t eat bacon OR peanut butter! So I decided to make a lower carb version without the bread, peanuts, and bacon!
RECIPE

Ingredients:
– Organic turkey bacon
– Organic Sunbutter (it’s just ONE single ingredient – sunflower seeds, that’s it)
– Sliced banana
Method:
Slice the bacon long ways into smaller strips if the bacon is very wide (I did this) to make more rows. Be sure to do this on a baking sheet lined with parchment paper. Refer to THIS VIEO on how to assemble. Next, place the baking sheet in the oven at 450 F until the top looks crispy, then flip the square over and continue baking until the other side begins to brown / crisp. Allow the bacon lattice to cool down (this will make the bacon more crispy and firm.) Spread on Sunbutter then top with desired amount of banana slices. You can eat this open face or fold to create a “sandwich”.
