Beet Burger with Portobello Mushroom Buns

I love using mushrooms as buns! Why? They’re easy, gluten free, vegan, paleo, yeast free…ok, ok, you get it. But this vegan, gluten and grain free, paleo beet patty in the center really makes the flavor of this burger poppin’!  I used Love Beets Organic, pre-cooked baby beets for this recipe to make is super easy and fast to prepare (and I’m glad I made extras for leftovers!)

Ingredients:
1 pack of Love Beets (5 baby beets)
1 long raw carrot
1/2 cup raw sunflower seeds
5 crimini mushroom
1/2 cup flaxmeal
2-3 garlic cloves
2 tsp sea salt (or more to taste)

Directions:
1. Process everything in a food processor and form into 5, 1/4 lb
patties and eat raw or grill.
*Can also use as meatballs for spaghetti, “grounds” for tacos, etc.
