Carrot Cake Samoa Cookies




 

Eeeek! These no-bake vegan + paleo carrot cake samoas are the best of both worlds! And only require 6 simple ingredients you can quickly pick up at the store today!

Base Ingredients:
1 cup freshly grated carrots (firmly packed)
1 cup unsweetened coconut shreds
1/2 cup raisins
4 pitted dates
2 Tbsp of Artisana Organics pecan butter (almond butter will also work)

Coating:

Method:
In a food processor, combine all base ingredients then form into rounds, and poke a hold in the center of each. Place in the freezer for at least 30 minutes to chill. Melt enough coconut butter (no exact measurements) to coat the cookie bottoms and drizzle on top. Enjoy! *Store in the refrigerator.
