Cashew Cookie Dough Bars don’t really exist….so I can’t say this is a healthy “candy re-make.” But what I CAN say is that it’s healthy and certainly tastes like candy!
Imagine a Reese’s Peanut Butter Cup…..in bar form.
Then remove the peanut.
Add cashew.
And it’s kinda like eating the soft cookie part of a Milky Way.
And it’s just 5 healthy ingredients!

Ingredients:
4 scoops of my Probiotic Vanilla Nuzest Protein Powder
1/4 cup creamy *cashew butter
1 Tbsp coconut oil
1 Tbsp **raw honey (date syrup for vegans)
3-4 Tbsp water
*Cashew butter tends to harden if refrigerated, if yours is firm, warm it up prior to mixing to the texture
**Candida and Keto Diet omit
Coating:
Santa Barbara Chocolate unsweetened organic chocolate (code: lilsipper)
Sea Salt
Directions:
1. Mix Nuzest, cashew butter, coconut oil, and honey / date syrup in a large bowl. Then add 3 Tbsp water and mix again. If dough seems too dry, add another Tbsp of water and knead with hands to form a ball of dough (texture should be like Play-Dough)
2. Firmly press dough into silicone molds or a small pan/container lined with parchment paper. You can make the height be as thick or as thin as you like (obviously the thinner the more bars you will get out of it). Place in freezer while melting chocolate.
3. Once chocolate is melted, remove dough from freezer, slice into desired shape and size, and coat with chocolate. Add sea salt when chocolate is not yet dry but not too wet (or it will melt into the chocolate)
Store in fridge or freezer. Repeat recipe at least once a week to keep sanity at bay. wink
