Chilled Avocado Cucumber Mint Soup

With the weather warming up, I’m trying to think of ways to incorporate bone broth besides just drinking it warmed up (though I still do that! haha)

Cinco De Mayo is right around the corner and so I thought….cinco soup? I mean, yes, you can totally serve this as chilled soup (as I did here) however it’s still thick enough to pass as a dip! Gut healing dip? I’m in!


I used Bonafide Provisions Chicken Bone Broth to not only amp up the flavor, but also the protein! And we all know how beneficial bone broth is for your gut and health in general, so why not? Once I thawed it (found in the freezer section) it still had it’s “gel” to it which I loved! So here we go!

Eat it as a:
• Soup
• Sauce
• Dressing
• Dip
• Spread….get creative!

Ingredients:
2 large avocados
1 cup Nancy’s Greek Yogurt
4 Persian cucumbers
1/2 cup fresh mint leaves, firmly packed
1/2 cup fresh cilantro, firmly packed
1 cup Bonafide Provisions chicken bone broth, cold
Juice from 1/2 lemon
Sea salt to taste

Directions:
1. Blend all ingredients. Adjust seasoning to taste. Serve chilled with a drizzle of raw honey (trust me, it’s amazing!)
