The kind I used is specifically higher in polyphenols than regular cocoa powder and it tastes better too (not bitter) hence its darker / red hue.

Recipe
Ingredients:
– 1 cup butter (2 sticks), I used Raw Farm
– 1/3 cup of Santa Barbara Chocolate High Polyphenol cocoa powder (20% off code: lilsipper) – this makes a HUGE difference in taste and makes the butter not bitter compared to regular cocoa powder.
*Option to add sweetener of choice to taste (but I didn’t)
Method:
1. Soften butter on the counter or overnight (you can also do this in the microwave but not recommended as the microwave will heat the butter to fast and melt it – You don’t want it melted, just very soft like cream).
2. Add the softened butter and SBC high polyphenol cocoa powder (20% off code: lilsipper) to a mixing bowl (and sweetener if using).
3. Using a stand mixer or hand held mixer, beat on low first, then gradually increase the speed to the highest. *Do not mix on high from the beginning, otherwise the cocoa powder will puff out of the bowl and go everywhere!
4. Once everything is mixed, transfer the chocolate butter onto a sheet of parchment paper and form into a log shape (or whatever shape you want). Wrap the butter in the parchment paper and refrigerate until the butter is firm (preferably 4-5 hours or overnight).
*You can also enjoy this instantly and don’t have to refrigerate for a creamy spread.
