Chocolate Cauliflower Rice Pudding


Cauliflower is back in business despite what you may think, it’s incredibly versatile and has a subtle flavor which means it really takes on any flavor you add to it (especially when it’s cooked into it!)

Recipe
Serves 2
Ingredients:
– 1 frozen bag of riced cauliflower (must be frozen)
– 1 1/2 cups of non-dairy milk
– 4 scoops of Bethany’s Pantry Cocoa DSP (thi helps thicken it up, whey, collagen, and beef protein will not thicken it up as Bethany’s Pantry does)
– 4 Tbsp of red cocoa powder (20% off code: LILSIPPER), this makes a HUGE difference in taste vs regular cocoa powder which is 90% of what is on the market
*optional to add a sweetener of choice to taste (but I never do personally)
Method:
1. Pour the entire bag of frozen cauliflower rice and milk in a saucepan over medium heat and cook until the cauliflower is soft.
2. Next, add Bethany’s Pantry DSP, red cocoa powder, and sweetener (if using) into the pot and stir well. Taste. If it needs additional cocoa powder or sweetener add it in now.
3. Pour contents into a glass dish and sprinkle with extra cocoa powder over the top (optional), cover the container with a lid and place in the refrigerator overnight. The next day, enjoy chilled with optional toppings below.
