Chocolate Chip Whoopie Pie Cookies

I could cry, cuz this combo never looks so dang sexy together. Better than whoopie…….pies. And it get’s even better than that…you can freeze them for Ice Cream Sandwiches (or leave as a soft, fluffy dessert – up to you!)

 

Ingredients:
1 cup of my 2-Ingredient Sweet Potato Frosting
Preferred cookie recipe of choice (see below)

Cookie Recipe Options:
Paleo “Oatmeal” Raisin Cookie
5 Ingredient Vegan Chocolate Chip Cookies
60 Second Lenny and Larry Cookie Remake
Cashew Cloud Cookies

Directions:
1. Melt cacao/chocolate then blend in a blender with sweet potato/pumpkin puree.

  1. Refrigerate at least 5 hours or overnight to allow frosting to thicken to a firm, “frosting-like” consistency.

  2. Bake cookies and allow to cool (if you can wait!).

  3. Assemble cookie sandwiches and….do I even have to explain the rest?
