Cottage Cheese Cauliflower Tots

These potato-free tots are paleo, keto, and suitable for anyone following a low-carb lifestyle (or just trying to sneak in some extra veggies and fiber!).

Personal Story

I had leftovers sitting out on the counter after I filmed this recipe for my Instagram, and I was editing the video. Meanwhile, my husband walks in (not knwoing what this recipe was but assuming they were just tater tots) and begins to not only eat some, but finishes them all!

He told me “wow, these re really good” and had no idea they were NOT potatoes – and once I told him they were made with cottage cheese he felt like I betrayed him becuae he HATES cottage cheese and knows I know he hates it! Haha! Needless to say, he loved them despite cottage cheese was one of the main ingredients and the fact he couldn’t tell there were not potatoes in this recipe was icing on teh cake!

It was a win for him!

Recipe

Makes 18 – 24 tots (depending on the size)

Ingredients:
– 12 oz bag of frozen cauli-rice, defrosted overnight in the fridge or left out ont eh counter for 2 hours to thaw
– 1 cup cottage cheese
– 2 scoops of Equip Foods grass-fed unflavored collagen (adds 28g of protein – 20% off code: LILSIPPER)
– preferred seasonings to taste (I love THIS seasoning)
– olive oil spray

 

Method:
1. Preheat oven to 425 F and line a baking sheet with parchment paper.

2. Spread the thawed cauli-rice out onto layers of paper towels or a clean kitchen towel and squeeze to absorb excess moisture (very important to get as much moisture out as possible) and set aside.

3. Blend the cottage cheese with Equip Foods collagen (20% off code: lilsipper) until smooth.

4. Add the cauli-rice, blended cottage cheese, and spices to a bowl and mix well.

5. Scoop out the batter with a small cookie dough scoop or rounded tablespoon and form into desired shape and place onto the prepared baking sheet. Coat tots with olive oil spray and bake until browned (about 20 – 30 minutes). If you see the tots beging to flatten, don’t worry, you can reshape them the last 5 minutes of baking. Be sure to allow all the mousture from the cottge cheese to eveporate – depending on the brand of cottage cheese you use, some may be more runny than others.

Serve with desired dip or eat plain (they’re that good!)
