
This version of RIGATONI PIE is a crowd pleaser and doesn’t take much effort to make either! Just a few simple, easy to find ingredients are all you need to impress your guests (and even yourself!).
For the Meat Sauce:
– Olive oil
– 1 medium onion, chopped
– 1 lb of grass-fed ground beef
– 1 jar of marinara sauce
For the Pasta:
– 2, 16 oz packages of rigatoni pasta
For the cheese:
– 8 oz of cottage cheese
– 8 oz of ricotta cheese
– fresh mozzarella cheese



Method:
Preheat your oven to 350 F. Heat olive oil in a pan and add onions. Allow them to brown then add in your meat. Chop the meat well so it’s finely minced. Once cooked, add marinara sauce and simmer while you prepare the rest. Meanwhile, cook the pasta in boiling water until al dente (about 2-3 minutes). Drain water and set aside. Add 1/2 of our meat sauce to the bottom of a 9 inch springform pan, then assemble your rigatoni pasta. For the cheese, mix 8oz of cottage cheese with 8oz of ricotta, then spread on top of the rigatoni. Layer the rest of your meat sauce on top of the cheese, then layer desired amount of shredded / crumbled mozzarella on top of the meat sauce. Cover pan and bake for about 45 minutes, uncover pan then broil for 1-3 minutes until you see the cheese begin to boil and turn brown. Remove from the oven and allow to cool before releasing the sides of the springform pan. Slice and enjoy!
