Double Steamed Eggs

 

 

Double Steamed Eggs may be my newest obsession. I already did this once with the classic Chinese steamed egg version, but I saw this double version floating around on the ethernet and I had to try it and dare I say, it’s even better than the original version!

 

Crack 2 eggs in a bowl and add boiling water to the bowl and immediately whisk so the water doesn’t cook the eggs. Once foamy bubbles form in the bowl, pour it through a sieve and into another bowl to remove the bubbles anad create a silky smooth texture.

 

Place the bowl in a steamer and cover with the lid. Steam for 5-10 minute or until the eggs are mostly set (check at the 5 minut point). Then add the additional 2 eggs on top and steam for another 3-6 minutes or until the eggs are to your desired done-ness.

 

Recipe

Ingredients:
– 4 eggs
– 1/2 cup boiling water
Toppings (optional)
– fresh herbs of choice
– soy sauce
– chili crisp oil
Method:

Once foamy bubbles form in the bowl, pour it through a sieve and into another bowl to remove the bubbles anad create a silky smooth texture. Place the bowl in a steamer and cover with the lid. Steam for 5-10 minute or until the eggs are mostly set (check at the 5 minut point). Then add the additional 2 eggs on top and steam for another 3-6 minutes or until the eggs are to your desired done-ness. Top with preferred toppings or eat plain with salt and pepper.
