Easy Blueberry Lemon Loaf (paleo, keto, sugar free)

If you saw this go down in my Instagram stories, then you know what I’m talking about when I say the texture was the most fluffiest ever! And for anyone needing a chocolate break or want something that won’t keep you up at night with no caffeine, THIS IS IT! But this loaf isn’t just for evenings…I’d say it’s just as good enjoyed in the morning with a cup of matcha or herbal tea! This was so easy to make too! Just mix, bake, eat!

Ingredients:
1 tsp baking soda
1/4 cup fresh lemon juice
4 eggs
1/2 cup Artisana Organics cashew butter (one time use discount code: lilsipper)
2 scoops of Nuzest unflavored protein powder
1 cup frozen wild blueberries

Instructions:
1. Preheat oven to 350 F.
2. With an electric or stand mixer, mix first 5 ingredients then gently fold in 1/2 cup blueberries with a spoon and pour into a bread pan. Top with remaining 1/2 cup blueberries and bake for 30 minutes.
