Easy Shepherd’s Pie

This is one of my husbands favorite dishes for many reasons and why it may become your new favorite as well!
1) It’s delicious
2) It tastes even better the next day
3) It’s healing for the body and the soul
4) It’s a one-pot-meal (his favorite type of meal)
5) It reheats well
VEGAN or VEGETARIAN? *I got swaps for that too!

Serves 4-6
For the base:
– 1 lb of ground meat (venison, beef, elk, or turkey, etc.)
– 1 medium organic onion, chopped
– Olive oil (for cooking the meat and onions, about 1/4 cup)
– Ground pepper to taste
– 1 cup of finely chopped organic carrots
– 1 & 1/2 cup frozen organic peas
– 3 Tbsp of organic tomato paste (get the kind without citric acid)
– 2 cups of bone broth (I used Bonafide Provisions no salt added beef)
– 2 Tbsp of flour of choice (low carb omit flour)
For the top layer
– 1 & 1/2 lbs (24 oz) of organic Yukon gold potatoes (low carb option, use cauliflower puree instead)
– 4 Tbsp of grass-fed butter (or ghee)
– splash of milk or cream
VEGAN / VEGETARIAN swaps
*Swap meat with lentils
*Swap bone broth with Bonafide Provisions organic vegetable broth
*Swap butter for coconut oil
*Swap milk/cream with coconut milk
Method:
Heat a large stock pot on your stove over medium heat, add oil, onions, ground meat, and pepper. Allow it to sizzle and the onions sweat while you mash up the meat. Allow that to cook through while you wash your potatoes and set them in a pot of water. Allow that water with the potatoes to come to a boil and simmer until soft. While potatoes are cooking, add carrots, peas, tomato paste, bone broth, and flour to the pot of beef and continue cooking on medium, allowing the flavors to simmer together and reduce to a thick consistency (it should NOT be “water-y’ or “soup-like”). Drain excess water from the pot of potatoes, add butter and cream and use a potato masher or high speed mixer to whip the potatoes. Transfer the meat mixture into an oven safe casserole dish, then top with the whipped potatoes. Place in the oven at 500 degree F for about 5-10 minutes or until the top of the potatoes are browned. Allow to cool before enjoying.
