Did you know pumpkin seeds help expel parasites from the body! (No joke) So try this RAW pumpkin seed & arugula pesto! I used a few of my go-to products to keep it super simple yet still healthy (and delicious, duh!).
1/2 box Explore Cuisine’s Organic, Non-GMO Edamame Pasta (20% off: lilsipper)
4 cups firmly packed Organic Girl’s Baby Arugula
3/4 cup raw, unsalted pumpkin seeds
1/3 cup olive oil
2 large garlic cloves
S&P to taste
1. In a blender (I used my Vitamix), puree arugula, pumpkin seeds, olive oil, & garlic until everything is well blended. Add salt and pepper to taste. Add more olive oil if you like your pesto on the thinner side, less if you like it thicker.
2. Tossed with edamame noodles, fired roasted bell peppers, and garnish with pumpkin seeds, sesame seeds, & seaweed crumbles.
