Grain Free Spinach Biscuits!

I’ve been on a savory kick lately and wanted something with spinach – Enter these Grain Free Spinach Biscuits!
I added some goat milk cheese (only cheese I will eat) since it has less lactose and you can actually digest it easier than regular cow’s milk and doesn’t cause any inflammation when used in moderation.


And of course what would a gut healthy recipe be without the benefits of adding Vital Proteins collagen! You don’t have to add it, however it has amazing gut healing benefits as well as help nail and hair growth (so why not since you can’t even taste it!) Win win!


Ingredients:
4 eggs
1 tsp baking soda
3/4 cup cashew butter (I used Artisana)
1 1/2 Tbsp Ranch Dip Mix (I used Primal Palate – super clean ingredients!)
2 Tbsp coconut oil
2 scoops Vital Proteins collagen peptides (great for gut health and added protein)
2 cups chopped frozen spinach
Grated goat milk cheese to taste (optional)

Instructions:
1. Mix everything (except spinach and cheese) with an electric or stand mixer then fold in spinach with a spoon (and goat cheese if using) and transfer batter into desired tin / cupcake pan, etc. Bake @ 350 F for about 25 minutes.
