Healthy Butter Pecan Fudge!

Anything with the word “butter” has got my attention! Well this actually no NO butter (just pecan butter LOL) but tastes just as sinful without all the processed sugar you would find in your typical “Butter pecan fudge” – and added bonus! Bottom Layer:

Fudge Layer:
1 cup of steamed cauliflower rice (measure after steaming)
1/4 cup of boiling water
1/4 cup of pecan butter
2 Tbsp honey (keto / candida diets omit)
3 scoops of Further Food grass-fed gelatin (one time use code: lilsipper)

Method:
1. Pour melted chocolate into mold / dish and freeze while making the fudge layer.
2. Puree all fudge ingredients well (be sure cauliflower is still hot / warm when doing this to activate the gelatin) and pour over solid chocolate. Refrigerate 2 hours or until fudge has set. Option to top with pecans and chocolate drizzle.
