Healthy Chili Fries Skillet

It’s National Junk Food Day! So of course I had to recreate the typical “chili cheese fries” platter into a NO FRY Chili Fries Skillet!

….I mean, it’s FRYday, right?

I sliced a potato and “fried” it in my air fryer for 12 minutes at 400 degrees. No oil. (you can also bake them if you don’t have an air fryer – time and temp will vary)

 

Served over a bed of Organic Girl’s Baby Arugula (love their greens!) with Nancy’s greek yogurt, avocado, and obviously the chili recipe below. I wished I had some of my Cauliflower Cheese on hand to grate over it, but it was still flippin’ bomb!

 

Chili Ingredients:
20 oz Pre-Brand 95% lean grass-fed ground beef
1 white onion, chopped
1/4 tsp cumin powder
1/4 tsp garlic powder
2 Tbsp chili powder
2 cups diced tomatoes
16 oz tomato sauce
2 cups bone broth or veggie broth
2 (16 oz) organic kidney beans (for easier digestion, soak them overnight, then cook. Canned may also be used)

Directions:
1. Cook ground beef and chopped onions in a deep pot with a little oil. Add spices and continue to cook on until beef is 100% done.

  1. Add remaining ingredients and simmer for about 20 minutes to allow chili to thicken and flavors to combine.
