I get asked quite often how to eat healthy on a budget. This ENTIRE skillet = $2.58 (sans the sauce – recipe below). For two servings, that’s $1.29 each / per meal / per person!
1 Organic zucchini $0.50
1 long loose carrot $0.20
4 organic eggs $1.33 (based off of a $3.99 / dozen carton)
1/6 pkg organic frozen peas $0.33 ($1.99 bag from Trader Joe’s)
1/9 pkg frozen green beans $0.22 ($1.99 bag from Trader Joe’s)
Buying frozen veggies is not only cost effective, but they can actually be FRESHER than “fresh” product sine they are flash frozen immediately after harvesting and don’t have the lag time of transportation, storage, and then sitting on the shelves at the grocery store. And they still retain all their nutritional benefits. The only thing “fresh” here are the eggs and zucchini (necessary to buy fresh if zooding!).
Now here’s the bomb sauce! Still pretty cheap since you only need to use literally tablespoons of the below.
3 Tbsp Fire Cider (code: lilsipper)
1-2 Tbsp Trader Joe’s organic coconut aminos
Cooking Directions:
1. Zoodle zucchini in your spiralizer. For the carrot, use a potato peeler and shred long strips.
2. Scramble eggs and add them to a saucepan filled with a shallow bath of Barebones Broth (code: lilsipper10). You can also use water. Add in zoodles, shredded carrots, frozen peas and frozen green beans and cook until eggs are done.
3. Mix sauce ingredients together and add it to your stir fry or “chow mein.” Season with s&p if desired and enjoy!
