Eggnog Fudge is here! (healthified of course!) Eggnog was one of my favorite drink as a kid during the holidays (ok, and it still is! LOL). However, now that I know what eggnog contains (raw egg yolks!) I always make a version of my own that I can personally consume and still enjoy….and who doesn’t love fudge? So I obviously had to make this cuz my crazy mind was telling me to! You’ll be hooked!

1/2 head of med./small cauliflower, steamed
1/2 cup coconut butter (measure when melted)
1/2 tsp nutmeg
1/4 tsp vanilla bean paste
2 Tbsp Further Food’s grass fed gelatin
*Option to add 1 Tbsp honey or 2 medjool dates (keto / candida diets omit). I personally didn’t add any sweetener and for me, it tasted great!
1. After steaming cauliflower, add it to a blender along with melted coconut butter and blend until smooth (do this while cauliflower is still hot from being steamed). Add remaining ingredients and blend again until smooth. Taste. If you feel like you want it sweeter, now’s the time to add honey / dates (then blend again).
2. Transfer pureed into a dish lined with parchment/wax paper (or silicone mold) and refrigerate at least 4 hours until firm. Slice and enjoy! Store in refrigerator.
