vegan + keto + paleo OREOS!
When you want something bad enough, you find a way….these were so easy to make, I use my “teddy graham” recipe for the ends and plain coconut butter for the filling. Easy peasy! Imagine these smashed into nicecream (if there’s any left after snacking on them alone)
1. Double the recipe of my “low-carb chocolate teddy grahams”
2. Once the chocolate dough is mixed, roll with a rolling pin between 2 sheets of parchment paper and cut into circles using a cookie cutter.
3. Bake circles on a lined baking sheet at 350 F for 8 minutes. Allow to cool (very important) before removing from pan (careful they are delicate). Place in freezer until chilled (very important)
4. While chocolate circles are super cold, place a dollop of room temp coconut butter in the center of one chocolate circle then sandwich with another.
*Important to assemble while chocolate ends are cold, this helps the coconut butter to solidify fast and not be runny. Store in refrigerator.
