Healthy Oreos (vegan, palo, + keto)

vegan + keto + paleo OREOS!

When you want something bad enough, you find a way….these were so easy to make, I use my “teddy graham” recipe for the ends and plain coconut butter for the filling. Easy peasy! Imagine these smashed into nicecream (if there’s any left after snacking on them alone)

End Ingredients:
– 1/2 cup rich cacao powder
– 4 scoops of Bethany’s Pantry Digestive Support Protein (no substitutions – this creates bulk and acts as a flour replacement – whey, casein, hemp, collagen, etc. will not work)
– 1 tsp cinnamon
– 4 Tbsps coconut oil, melted
– 8 Tbsp water

Filling:
Coconut butter

Method:
Mix first 3 ingredients then add coconut oil and water and mix well. With hands, form into one large ball and roll with rolling pin in between 2 sheets of parchment paper then cut out into circles. Bake circles on a lined baking sheet at 350 F for 8 minutes. Allow to cool (very important! DO NOT skip this step) before removing from pan (careful they are delicate). Place in freezer until chilled (very important). While chocolate circles are super cold, place a dollop of room temp coconut butter in the center of one chocolate circle then sandwich with another.

*Important to assemble while chocolate ends are cold, this helps the coconut butter to solidify fast and not be runny. Store in refrigerator.
