Healthy “Peanut Butter Caramel Popcorn”

Why I Don’t Consume Peanuts

You know I don’t eat peanuts for digestion purposes (and if you don’t READ THIS POST), so of course this “peanut butter” caramel popcorn is peanut free….and corn free too!

For those that can’t digest corn (I am one of them unless it’s ground into a flour like masa or in a tortilla) then this version is just for you! Perhaps you have a corn allergy or maybe you just have those rice cakes laying around and not sure what the heck to do with them. Problem solved!




• Peanut Free (thanks to Sunbutter)
• Corn Free
• Dairy Free
• Sugar Free
• High in Protein (from the gelatin)

Ingredients:
1 package of rice cakes
1 can of coconut milk
3 Tbsp of organic Sunbutter
2 scoops of Vital Proteins Grass-Fed Gelatin
2 tsp of sea salt

Method:
1. Crumble up rice cakes and set aside in a large bowl.
2. Heat coconut milk in a saucepan until it boils then carefully measure out 1 cup and pour it into a blender with Sunbutter and blend. Add Vital proteins gelatin and blend again.
3. Coat crumbled rice cakes then spread out onto a sheet pan lined with parchment paper and refrigerate 2 hours. Break apart and add preferred mix-ins and enjoy!
