Probably one of my new favs …Lentil Lasagna! These lasagna sheets from Explore Cuisine are made from lentils (ikr?!) So not only are they gluten free but full of protein and fiber…and dare I say, delicious! The obvious choice was to make lasagna, so of course I didn’t do that. *wink*
Explore Cuisine’s organic green lentil lasagna sheets (20% off: lilsipper)
2 cups Organic Girl’s Baby Spinach
4 canned artichoke hearts, chopped
1 cup greek yogurt
3 Tbsp mayo of choice
Pasta/marinara sauce of choice
1. Place lasagna sheets in a large pot of boiling water. Watch and be sure sheets do not stick together in pot. Occasionally stir for 5 minutes and remove from pot.
2. Meanwhile, tear Organic Girl’s spinach into smaller pieces and mix in a large bowl with artichokes, greek yogurt, and mayo.
3. Warm spinach dip in a small pot on stove over medium heat.
4. Fill lasagna sheets with dip, roll up, and serve with heated marinara sauce.
