


LAZY CARROT CAKE
Here me out: if a recipe requires too many ingredients, most likely I won’t make it. Carrot cake is one of those recipes. And since I’m the only one who loves carrot cake in this house, I’m not going to make an entire cake….instead, mini ones that are easy to throw together! Or make multiple ones for single serve cakes for everyone!

Ingredients:
– Dates
– Cream cheese (or use my 1-Ingredient homemade cream cheese)
– Organic rice cakes
– Freshly shredded carrots
– Shredded unsweetened coconut
– Georgia Grinders x Lilsipper Organic Toasted Coconut Butter, melted
Method:
Soak dates in hot water to allow them to soften (if they are already soft you can skip this step). Remove the pits. Spread cream cheese onto your rice cake, then top with shredded carrots and coconut and 1-2 soft dates that are “butterflied” open. Top with melted toasted coconut butter and place in the freezer until the coconut butter has solidified (about 5 or less minutes). Then enjoy!
Repeat with extra rice cakes and toppings.
