Low Carb Blueberry Muffins!

I legit ate the entire batch in about 4 minutes after I took these photos. LOL I am serious! There’s 32g of protein for all 6 fluffy muffins, and made without any nuts, seeds, gluten, grains, or dairy! Pretty sure these will become part of your weekly rotation. I mean, the fluff factor says it all!



Ingredients:
4 egg whites
1/4 cup of my x Nuzest Digestive Support Vanilla Protein Powder

Optional mix-ins:
Freeze dried blueberries, strawberries, or raspberries (I get mine from Trader Joe’s)
Chocolate chips

Method:
With an electric mixer, whip egg whites until peaks form, then gradually pour in protein powder slowly while continuing to mix at a lower speed (peaks should still be present and not deflate). Fold in your mix-ins (if adding) gently, then transfer batter into lined or oil-sprayed cupcake tins. Bake at 350 F for about 12 minutes.
