Low Carb Whipped Feta has Dip has been on the rage lately, but what if you can’t have dairy? Well I got you covered with this DAIRY-FREE option containing 46g of protein! But don’t worry, if you are a feta lover you can also make this the original way so there’s options for everyone!
Dairy Free Version:
– 1, 14 oz block of organic extra firm tofu (brine drained)
– 1, 12 oz jar of roasted red peppers (drained)
– 1 Tbsp of Kasandrinos Zeus Blend (this is what truly flavors it and why you can’t taste the tofu!) – 25% offcode: LILSIPPER
– 1, 12 oz jar of roasted red peppers (drained)
– 1 Tbsp of Kasandrinos Zeus Blend (this is what truly flavors it and why you can’t taste the tofu!) – 25% offcode: LILSIPPER
1. Add tofu or feta cheese (whichever option you are using above) to a food processor.
2. Remove one bell pepper from the jar and set aside. Drain any liquid from the jar of bell peppers and add remaining content to the food processor along with 1 Tbsp of Kasandrinos Zeus Blend. Begin to process contents.
3. While processing, drizzle some EVOO (highlight recommend Kasandrinos for the best flavor – yes you CAN tell the difference!) to loosen up the mixture while blending. Depending on the food processor you have, you may need to stop periodically and scrape down the sides (but the olive oil will help smooth out the blending as well).
5. Once you reach the desired texture YOU want (some like it chunky, some like it silky smooth, and others like it somewhere in the middle) remove the dip from your food processor and into a serving dish and create a “circle” or “O” shape in the dip.
6. Get the reserved bell pepper and chop it up. Add that in the middle of your dip and drizzle additional EVOO before serving.
Serving Ideas:
– With cut up veggies (cucumbers, carrots, zucchini, etc.)
– With crackers
– With lavash (see above for the low carb / .yeast free lavash I used)
