Low Carb Keto Chicken Salad

LOW CARB KETO high protein chicken salad that requires only 3 main ingredients for the salad and 2 for the cottage cheese dressing!

Notes + Tips + swaps

Turkey
Buy pre-cooked CLEAN turkey for a fast and easy throw-together meal. I got mine from Costco.

Dressing
Make sure you use QUALITY cottage cheese without any gums, flavorings, or fillers and it’s cultured for optimum digestion. It will also taste better! Full fat will make this creamier and more flavorful, however low fat can be used. My top picks are shown on the right.

Dairy-free
Use coconut yogurt or blended tofu instead of cottage cheese, however I have not tested either of these so I am unsure of the taste and texture they will have.

Celery
You can swap celery for chopped zucchini if celery gives you digestive upsets.

Olives
You can use any type of olives, however I chose kalamata because they give the salad a saltiness and “pop”

Onion salt
I have not tried it with any other seasonings and do recommend you use this, however any other seasoning mix such as a clean ranch mix or Italian seasoning would be a great option too!

 

Optional Add-Ins Ideas

– Hard boiled eggs for extra protein and texture
– Walnuts for extra crunch
– Raisins or cranberries for a pop of sweetness (note: these will not be low carb/keto)
– Freshly chopped parsley or cilantro

 

Salad Ingredients: 
– 3 cups cubed turkey (or chicken)
– 2 cups chopped celery *see notes for swaps above
– 1 jar of kalamata olives, drained (be sure there aren’t additives!)

Dressing:
– 1 tub of full fat cottage cultured cottage cheese (I used Kalona Supernatural brand) *see notes above for dairy-free alternatives
TJ’s onion salt to taste

Method:
Mix salad ingredients in a large bowl and set aside while you make your dressing. In a small blender, add cottage cheese and seasonings and puree until liquidly-like (do not add water!). Pour over salad and toss. Store extras for up to 4 days in the refrigerator.
