Low Carb Potato Salad (no cauliflower)

Low Carb Potato Salad

This will fool almost anyone and you won’t miss the creamy texture of potatoes one bit! – the crazy thing is, boiled daikon actually tastes like potatoes when thoroughly cooked!

Note: Daikon radishes have a “pepper-y” taste just like regular radishes, however when you cook them until soft, they LEGIT taste like boiled potatoes!

Ingredients:
2 large Daikon radishes, skinned and chopped
1/4 cup fresh dill, chopped
1 bunch of radishes, quartered
1/3 cup green onions, chopped
2-3 celery stalks, chopped
6 hard boiled eggs

Dressing:
1/4 cup brown mustard (or more to taste)
3/4 cup greek yogurt (or mayo / vegan mayo)
1/2 cup pickle juice
Pepper to taste

Method:
Wash all produce and peel radishes. Cut into cubes or 1/4 inch pieces and boil until you can easily pierce a fork through. While they are boiling, chop up everything else and prepare your dressing. Drain water from radishes and mix everything together. Refrigerate to until chilled before serving (it tastes 10x BETTER chilled!)
