Low Carb Red Pepper “Hummus”








 

LOW-CARB, bean-free gut-friendly red pepper “hummus”!

The issue with bell peppers for most, is that the skins are irritating. HOWEVER, many don’t realize that if you simply roast them, then peel away the skins they are much easier to digest and often don’t cause┬ádigestive upsets! So try this low-carb, high protein “hummus” without the gas and welcome back dips into your life!

Ingredients:
3 large bell peppers
1 garlic bulb
3/4 cup cream cheese, labneh, or very thick greek yogurt
1 scoop of collagen (I used Equip Foods which has 2x more collagen per serving than the leading brand – 20% OFF code: DIGEST)

Method:
Broil peppers whole on a baking sheet along the garlic bulb (cut in half) until the skins on the peppers begin to blister and they are soft. Remove from the oven and allow to cool. Once cooled, peel away the pepper skins and garlic skins and place in a food processor along with cream cheese / greek yogurt and collagen (if using). Process everything until you get your desired consistency. Serve with pita bread, crackers, or veggies (it’s also great as a pasta sauce!)
