No-Bake Raspberry Chocolate Bars!

5-INGREDIENT RASPBERRY CHOCOLATE BARS
Just in time for V-Day (or any day you want chocolate and raspberries, obviously). – If these don’t scream “eat me” then I don’t know what does? What makes these raspberry bars a “raspberry” are in fact, straight up freeze-dried raspberries! And no baking or downtime required to create these instant low sugar, vegan, and paleo treats!

Ingredients:
3 cups of freeze-dried raspberries (freeze-dried strawberries will also work but the color will be slightly less pink)
1 cup of my Digestive Support Vanilla Protein Powder by Nuzest
1 cup of either Artisana Organics cashew butter or Mac-Coconut Butter
1/2 cup filtered water
Chocolate chips (use Santa Barbara Chocolate unsweetened wafers for lower sugar content – discount code: lisipper – or coconut sugar sweetened such as Hu Kitchen Gems for a sweeter version)

Method:
Pulverize freeze-dried raspberries in a small blender until a fine powder forms (this only takes a few seconds). Add the powder to a large bowl with the protein powder (no substitutions will work) and mix well. Next, add cashew butter and water and continue mixing until a thick dough-like batter forms. Transfer batter into a small glass dish and freeze white you melt the chocolate. Once chocolate is melted, remove raspberry bars from the freezer, slice into desired shapes, and coat with chocolate. Store in the refrigerator.
