Our Go-To Chicken Soup (low carb + paleo)


 

This is our GO-TO SOUP

that *should* last for days but we typically finish it off pretty quick!

Perfect for when you don’t have time for dinner the next few nights or when you just want something cozy. It taste even better the next day!

What’s the secret? A few things….

– Parsley (this is a MUST!)
– Allowing it to sit at least one hour (preferably more) on the stove for the flavors to “marinate”
– Using chicken thighs with the skins and the bone-in
– Adding bone broth for extra protein and nutrients
– Not skimping on the sea salt and pepper!

Ingredients:
3-4 lbs of chicken thighs, bone in & skin on
24 oz (1 pk) of Bonafide Chicken bone broth (or their no salt added chicken broth)
6 cups filtered water
1 white onion, chopped
5-6 long carrots, chopped
bunch of parsley, chopped (about 1/2 cup chopped firmly packed)
4-5 long celery stalks, chopped
1 whole garlic bulb (or less, but I LOVE garlic!), minced or crushed
Sea salt to taste (I used THIS brand)
Black pepper to taste

Method:
In a large pot, add bone broth, chicken, and water and begin to cook on medium. While the chicken is cooking, wash and chop your veggies and add them to the pot. Season to taste and cover the lid with a crack so steam can escape. Simmer on medium for 30 minutes then turn off stove and cover with the lid (no cracks) and allow the soup to continue cooking from the residual heat for about 30 – 60 minutes. Serve once cooled. If you place in the refrigerator overnight the broth with gelatinize and you can truly see you’ve made a super thick bone broth!

Storage tips:
*Store in the refrigerator for up to 3 days OR freeze in mason jars (great for meal prep!), leaving 2 inches from the top because it will expand up. Do not freeze all in one big container as this will create one large block and will be difficult to defrost if you only want 1-2 servings.
